Sous Chef – World–Indian Fusion Concept
We are looking for a Sous Chef / Kitchen Operator to support and drive daily kitchen operations, working in close partnership with the Creative Chef and the kitchen leadership team.
This role is ideal for a chef who is ready for responsibility, strong in execution and leadership, and wants to be part of building and launching a new concept.
Your core responsibility:
You are responsible for the day-to-day execution of kitchen operations, ensuring that all agreed systems, calculations, and standards—defined together with the Creative Chef—are followed consistently.
Main duties:
- support and manage daily kitchen operations
- lead kitchen shifts, allocate tasks, and support the team during service
- ensure all recipes, portions, and cost calculations are followed precisely
- supervise health & safety, hygiene, cleanliness, and HACCP compliance
- complete and maintain daily operational paperwork (production sheets, temperature logs, cleaning schedules, wastage and stock control)
- assist with rotas, attendance, and shift planning
- communicate clearly with floor staff and the restaurant manager
- maintain service flow, solve problems in real time, and uphold standards
Development & opening phase:
- take an active role in the development and finalisation of the new menus
- help prepare the kitchen, systems, and team for the new concept and opening
- work closely with the Creative Chef during testing, training, and implementation
- be part of a strong existing kitchen team with solid Indian cuisine experience
Creative & culinary role:
- participate in menu development and dish creation
- the Creative Chef leads concept, creativity, food cost, calculations, and supplier relations
- act as a strong operational and creative backup, helping translate ideas into consistent execution

What we’re looking for:
- proven experience as a Sous Chef or senior Chef de Partie
- indian cuisine experience is not required — curiosity and willingness to learn are essential
- strong leadership, organisation, and communication skills
- fluent English (spoken and written)
- high level of discipline, responsibility, and attention to detail
- a chef who wants to grow into higher responsibility
